
Place the raisins in a bowl and cover them with boiling water. Leave them
to soak.
Wash the spinach and then place the wet leaves in a large pan and cook
for 2/3 minutes until the spinach is reduced and the water is driven off.
Chop the spinach and then add the raisins after draining them..
Gently fry the chopped garlic and pine nuts in a little olive oil in a frying pan
for 1 minute, turning frequently.
Now add the spinach and raisins, add a pinch of salt and ground pepper and
cook gently for 5 minutes, stirring frequently.
Add the croutons and serve hot.
