Amish Asturian Soup Recipe

Ingredients:
WHITE BEANS 200g
KIDNEY BEANS 200g
CHORIZO SAUSAGE 50g
PORK OR BEEF 50g
CHOPPED SERRANO HAM 50g
GARLIC 2 CLOVES
1 ONION
EXTRA VIRGIN OLIVE OIL 1/4 teacup
SALT AND PEPPER

GARNISH : CHOPPED PARSLEY OR CORIANDER


Directions:
If you start with uncooked beans, soak the beans overnight in water. If time is against you, tinned beans can be used, but do not use the tinned liquid. Gently heat the olive oil in a large pan. Add the chopped onion and the small pieces of pork or beef. Cook slowly until the onion is light brown, turning the small pieces of meat with a wooden spoon. Add the chopped cloves of garlic, the chopped ham and chorizo and continue to cook for 2 minutes. Allow to cool for a few minutes and then add about 2 pints of water with a pinch of salt and pepper. (Adding water to hot oil can be dangerous, so allow the oil to cool down first.) If you started with uncooked beans, bring your soup to the boil and simmer for 3 hours until the beans are soft. Simmer for 20 minutes if tinned beans were used. Serve hot and garnish with croutons or chopped parsley. CROUTONS : Remove the crusts from 4 slices of brown bread. Cut the bread into small squares. Place them on an oven tray. Sprinkle them with olive oil and place under a grill until golden brown.
